Job Duties: PREPARE AND COOK LARGE QUANTITIES OF FOOD FOR INSTITUTIONS, SUCH AS SCHOOLS, OR CAFETERIAS. CLEAN, CUT, AND COOK MEAT, FISH, OR POULTRY. COOK FOOD ITEMS ACCORDING TO MENUS, SPECIAL DIETARY OR NUTRITIONAL RESTRICTIONS, OR NUMBERS OF PORTIONS TO BE SERVED. CLEAN AND INSPECT GALLEY EQUIPMENT, KITCHEN APPLIANCES, AND WORK AREAS TO ENSURE CLEANLINESS AND FUNCTIONAL OPERATION. DIRECT ACTIVITIES OF ONE OR MORE WORKERS WHO ASSIST IN PREPARING MEALS. TAKE INVENTORY OF FOOD SUPPLIES AND EQUIPMENT. MONITOR MENUS AND SPENDING TO ENSURE THAT MEALS ARE PREPARED ECONOMICALLY. INSPECT FACILITIES, EQUIPMENT, OR SUPPLIES TO ENSURE CONFORMANCE TO STANDARDS. DETERMINE MEAL PRICES, BASED ON CALCULATIONS OF INGREDIENT PRICES. PLAN MENUS THAT ARE VARIED, NUTRITIONALLY BALANCED, AND APPETIZING, TAKING ADVANTAGE OF FOODS IN SEASON AND LOCAL AVAILABILITY. TRAIN FOOD PREPARATION OR FOOD SERVICE PERSONNEL. PREPARES REQUISITION OF FOOD SUPPLIES, KITCHEN EQUIPMENT, AND APPLIANCES, BASED ON ESTIMATES OF FUTURE NEEDS. MAY PERFORM OTHER RELATED DUTIES AS ASSIGNED.
High School Diploma Required? Yes
Qualification Requirements: MUST HAVE AT LEAST 12 MONTHS WORK EXPERIENCE AS A COOK. PREFERABLY WITH TRAINING OR EXPERIENCE THROUGH ON THE JOB OR APPRENTICESHIP PROGRAM IN AN INSTITUTIONAL KITCHEN. PREFERABLE WITH JOB-RELATED SKILLS AND EXPERIENCE IN COOKING LARGE QUANTITIES AND BIG BATCHES OF FOOD FOR SERVING. MUST BE KNOWLEDGEABLE WITH REGARDS TO STANDARD FOOD SAFETY REQUIREMENT WHEN IT COMES TO HANDLING, PREPARATION, AND COOKING OF FOOD AND MENU. MUST BE ABLE TO LIFT AT LEAST 45 LBS. AND CAN WORK ON A FLEXIBLE OR AN EARLY MORNING SHIFT. ADDITIONAL KNOWLEDGE AND SKILLS ON QUALITY CONTROL ANALYSIS AND MUST HAVE STRESS TOLERANCE TO BE ABLE TO DEAL CALMLY AND EFFECTIVELY IN STRESSFUL SITUTAITONS.

WORKERS ARE OFFERED EMPLOYMENT FOR A TOTAL NUMBER OF WORK HOURS EQUAL TO AT LEAST THREE FOURTHS OF THE WORKDAYS OF THE TOTAL PERIOD THAT BEGINS WITH THE FIRST WORKDAY OF EMPLOYMENT UP TO THE EXPIRATION OF THE WORK CONTRACT.
