| Job Duties: | Bake variety of bread products according to recipe, company standards and safe food handling practices. Check daily daily production schedules and product orders before starting production. Check the quality of raw materials to ensure that standards and specifications are met. Adapt the quantity of ingredients ratio to production level. Check products for quality and identify damaged or expired goods. Set oven temperatures and place items into hot ovens for baking. Combine measured ingredients in bowl for mixing, blending, or cooking machinery. Place dough in pans, molds, or on sheets and bake in production ovens. Set time and speed controls for mixing machines, blending machines so that ingredients will be mixed or cooked according to instructions. Check machines and equipment to ensure that they are sanitized and meet health and safety regulations before, during and after operations. Report any malfunctions or fill in request for maintenance inspection due to abnormal operating capacity. Perform daily condition check and maintain equipment as necessary. Observe color or products being baked and adjust, and adjust oven temperature, humidity and conveyor speeds accordingly. Measure and weigh flour and other ingredients to prepare batters, dough, fillings and icings using scales and graduated containers. Roll, knead, cut and shape dough to established standards. Applying glazed, icings or other toppings to baked goods using spatulas and brushes. Monitor equipment operation, gauges and panel lights to detect deviation from standards. Confer with Supervisors or other equipment operators to report equipment malfunctions or to resolve production problem. Press and adjust controls to activate, set and regulate equipment according to specification. Record gauge reading, test results, and shift production in log book. Read and interpret work orders and instructions to determined work assignments, process specifications and production schedules. Other assigned duties as needed. |

| Qualification Requirements: | Knowledge working with mass production ovens and monitoring productions and determining oven temperature and baking time. Must have good knowledge in production process, raw materials, quality control , raw material control cost, mixing, baking, decorating, icing, recipe formulation and inventory. Knowledge of relevant equipment, policies and procedures for health and safety standard. High school graduate or equivalent work experience. Received formal training, certificate or apprenticeship program preferred. At least 2 years experience in commercial baking and commercial mass production bakery equipment and tools. Must have the ability to carry out handover procedures in food processing. Must be able to stand for a long period of time and must be able to left between 20 and 30 lbs. Be able to work flexible work schedules including morning, evening, weekend and holidays. Must be very dependable and reliable. Must be able to work with limited supervision and in good physical condition. |
