| Job Title: | JR Sous Chef - Butchers and Live Fish |
| Job Duties: | • Assist in the management of the kitchen’s daily operations. • Assist the Sous Chef to manage the butchery’s daily operations cost effectively and efficiently within budget. • Monitor stockroom storage levels to ensure sufficient supplies. • Monitor the quality of processing and preparation in the kitchen. • Train, coach, motivate, counsel and evaluate kitchen staff. • Conduct departmental training and write operating procedures. • Assess food quality standards and arrange training sessions and refresher courses for kitchen staff in coordination with the Food & Beverage Training Manager. • Promote a work environment where employees feel valued, appreciated, involved, equal and safe. • Suggest creative ideas to enhance the kitchen’s image and offering. • Interact with department and company team members, management, and contractors professionally and positively. • Follow health and safety standards and strive for constant improvement to avoid health and injury hazards. • Remain well-mannered and well-groomed as per department and company standards at all times. • Adhere to the company policies and procedures and comply with the Code of Conduct. • Perform other related duties as assigned. |

| Qualification Requirements: | • Minimum of 3 years of experience in a four (4) or five (5) star hotel environment or well-known properties’ butcher kitchen. • Excellent product knowledge of fresh foods (meat, fish, seafood), expiry periods, and pricing of supplies; accurate knife skills; understanding of HACCP standards and guidelines. • Able to work in cod temperature environment for long period of time • Secondary school or equivalent working experience. • Ability to operate Microsoft Windows system & Office software. • Ability to communicate in English; Cantonese, Mandarin & French is an advantage. • Excellent leadership and supervisory abilities. • Good communication and interpersonal skills. • Able to work on shifts and be flexible regarding work schedules according to business demand. • Must be able to sit or stand for long periods of time while performing duties. • Team player who responds quickly to demands and thrives in a high-pressure work environment. • Able to multi-task. |
